Happy Sunday everyone! Breakfast foods are one of my favorites – nothing beats a Sunday brunch, am I right? But for those relaxing mornings at home preparing your own yummy breakfast can be just as fun. Below are a few of my favorite savory and sweet recipes I’ve found. GRANOLA PARFAIT

| Makes: 5-8 servings|

Ingredients:

  • 6 c. uncooked old fashioned oats
  • 2 c. sliced almonds
  • 1 c. shredded coconut
  • 1 c. roasted and salted sunflower seeds
  • 1 Tbsp. flaxseed (or more if you like it!)
  • 1 Tbsp. wheat germ (or more if you like it!)
  • ½ c. coconut oil, melted
  • 1 c. honey
  • Greek yogurt
  • raspberries
  • strawberries, sliced
  • chopped dark chocolate

MINI HAM CHEESE & SPINACH BREAKFAST PIE

| Makes: 4 servings |

Ingredients:

  • 1 sheet frozen puff pastry, thawed and rolled out
  • 6 Jones Dairy Farm ham slices, chopped
  • 3/4 cup ricotta
  • 1/2 cup grated mozzarella, plus more for topping
  • 2 tablespoons milk
  • 1/4 teaspoon nutmeg
  • salt and pepper to taste
  • 1 tablespoon extra virgin olive oil
  • 1 large shallot, minced
  • 1 clove garlic, minced
  • 4 cups baby spinach
  • 1 egg, beaten

CINNAMON ROLL MUFFINS

| Makes: 12 servings |

Ingredients:

  • 2 cups all purpose flour
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • ¼ cup sugar
  • 3 tablespoons melted butter, cooled slightly
  • 1 egg
  • 1 cup milk (plus more as needed)
Topping and Filling
  • 1 cup brown sugar, loosely packed
  • 3 teaspoons ground cinnamon
  • 1½ cups coarsely chopped pecans or walnuts
  • 3 tablespoons melted butter
Frosting
  • 2 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 tablespoon milk
  • dash of vanilla

CHEESY BACON AND EGG HASH

| Makes: 4 servings |

Ingredients:

  • 24 oz | 700 g potatoes (about 4 medium-sized), scrubbed clean and peeled
  • 2 tablespoons olive oil (or coconut oil)
  • 7 oz | 200 g diced bacon (trimmed of fat)
  • 2 scallions or spring onions (shallots), trimmed and finely sliced
  • 4 large eggs
  • ¼ cup shredded mozzarella cheese (or cheddar)
  • Cracked pepper to season

LEMON POPPYSEED PANCAKES

| Makes: 4-8 servings |

Ingredients:

dry ingredients
  • 3/4 cup all-purpose flour
  • 1/4 cup whole wheat flour
  • 1/3 cup sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
wet ingredients
  • 1 cup buttermilk
  • zest of two lemons
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 3 Tbsp butter, melted
  • 1 egg
  • 1 1/2 tsp vanilla extract
  • 1/3 cup poppy seeds
